A refreshing summer salad with grilled peaches, fresh tomatoes, and a creamy whipped feta mousse.

Ingredients

- OreganoPuglian oregano recommended

- Extra Virgin Olive OilExtra virgin olive oil, for marinating and making the feta cream
- Greek FetaGreek feta, classic

- Ricotta(optional) — Optional: add for a milder flavor
Method
- Cut the tomatoes into chunks (some into wedges, some into cubes) and place them in a bowl.
- Add torn basil, pepper, salt, and extra virgin olive oil. Gently mix and let marinate.
- Grill the peach halves on a hot griddle until caramelized marks appear, without fully cooking them.
- Prepare the whipped feta: place feta in a blender or food processor, add a splash of water, oregano, pepper, abundant oil, and lemon zest. Blend until creamy. (Optional: add ricotta for a milder flavor.)
- Cut the grilled peaches into wedges.
- To plate: spread the feta cream on the bottom of the plate, create a small cavity. Alternate marinated tomatoes and grilled peaches on top. Drizzle with some of the marinating juices.
- Finish with a pinch of oregano and fresh basil leaves. Serve.
