Potato Salad with Tuna, Beans and Onions

A classic Italian potato salad enriched with three types of beans, tuna, and spring onion, dressed with a simple yet flavorful vinaigrette of olive oil, wholegrain mustard, and lemon juice. Best served cold after resting for at least half an hour.

- Boil the potatoes in salted water until tender, then drain and let them cool completely.
- In a large bowl, add the sliced spring onion, three types of beans (red, cannellini, borlotti), and tuna. Mix gently.
- Add the cooled potatoes to the bowl and toss everything together.
- Prepare the dressing: in a small bowl or jar, combine extra virgin olive oil, wholegrain mustard, lemon juice, salt, and pepper. Whisk or shake until emulsified.
- Pour the dressing over the salad and mix well to coat all ingredients.
- Let the salad rest for at least 30 minutes (or refrigerate) before serving. Stir again just before serving.
