Capricciosa salad is a classic Italian appetizer made with blanched vegetables, cooked ham, cheese, and a light vegan mayonnaise.

Ingredients

- Soy MilkUnsweetened soy milk for the vegan mayonnaise
- Seed OilSeed oil for the mayonnaise
- Pickled GherkinsPickled gherkins, sliced for garnish
- Hard-Boiled EggsHard-boiled eggs, sliced for garnish
Method
- Bring water to a boil with vinegar, sugar, and salt.
- Clean and cut bell peppers, carrots, and celeriac into fine strips.
- Blanch the peppers in the boiling water for 1 minute, then immediately transfer to ice water. Repeat with carrots and celeriac.
- Drain the vegetables and dry them on a clean cloth.
- Cut cooked ham and cheese into small cubes.
- In a bowl, combine some of the vegetables with the ham and cheese.
- Prepare the vegan mayonnaise: blend soy milk, seed oil, apple cider vinegar, and salt (in that order) until emulsified. Adjust seasoning to taste.
- Mix the mayonnaise with the vegetable-ham-cheese mixture until well coated.
- Slice pickles and hard-boiled eggs. Arrange them on top of the salad as garnish.
- Let the salad rest in the refrigerator for about an hour before serving (optional, but recommended).
- Serve and enjoy.
