A versatile pizza dough with 65% hydration, suitable for fried or baked pizza. Made with Tipo 0 flour, yeast, olive oil, and salt. Bulk fermented for 48 hours for optimal flavor and texture.
Ingredients
5 items- 1500 gFlour
- 975 gIced WaterIce-cold water
- 4 gPowdered Brewer's Yeast
- 30 gExtra Virgin Olive OilAdded at the end
- 37.5 gSaltAdded last
Method
- In the mixer bowl, combine the flour and powdered yeast.
- Start the mixer on low speed and gradually add about 70% of the ice-cold water.
- Increase the speed to maximum to develop the gluten network.
- Slowly add the remaining 25โ30% of water while mixing.
- Add the olive oil and continue mixing.
- At the very end, add the salt and mix until the dough comes together and pulls away from the sides.
- Let the dough rest briefly, then bulk ferment in the refrigerator for 48 hours.
- After bulk fermentation, divide the dough into individual balls (panetti) and let them rest at room temperature for about 3 hours before shaping and cooking.
