Ingredients
7 items- BasilFresh basil leaves, crisp and fragrant
- GarlicRemove the germ for a milder flavor; use only a small piece
- Extra Virgin Olive OilGenerous amount
- Ice CubesTo keep the mixture cold and prevent oxidation
- SaltA pinch
- ParmigianoGrated
- Pine Nuts
Method
- Place the basil leaves in a blender.
- Add a small piece of garlic (remove the germ).
- Add a generous amount of extra virgin olive oil and start blending.
- Add a few ice cubes while blending to keep the mixture cold and prevent oxidation.
- Add a pinch of salt and continue blending.
- Add the Parmesan and pine nuts, then blend until smooth.
- Check the consistency with your finger; it should be creamy and spreadable.
