Beef Burger with Artichokes and Lime Mayo

A juicy beef burger topped with crispy fried artichokes, sautéed artichokes with garlic and chili, and a homemade lime (lemon) mayo.

- Extra Virgin Olive Oilfor sautéing
Method
- Prepare the burger: mix ground beef with salt and pepper, shape into two patties.
- Clean the artichokes: remove tough outer leaves, trim the stem and top, remove the choke. Slice one thinly for chips, cut the other into wedges.
- Fry the artichoke chips in vegetable oil at 180°C for 4-5 minutes until golden. Drain and season.
- Sauté the artichoke wedges in a pan with olive oil, garlic, and chili. Add chopped mint at the end.
- Make the mayo: separate the egg yolk, add a pinch of salt, lemon juice and zest. Slowly pour in oil while whisking until emulsified.
- Toast the burger buns in a non-stick pan with a little oil.
- Cook the burger patty in a hot pan without oil, 3-4 minutes per side for medium-rare.
- Assemble: spread mayo on both halves of the bun. Add sautéed artichokes, then the burger, then fried artichoke chips, fresh mint leaves, and a sprinkle of lemon zest. Close the bun and serve.
