Method

  1. Prepare the burger: mix ground beef with salt and pepper, shape into two patties.
  2. Clean the artichokes: remove tough outer leaves, trim the stem and top, remove the choke. Slice one thinly for chips, cut the other into wedges.
  3. Fry the artichoke chips in vegetable oil at 180°C for 4-5 minutes until golden. Drain and season.
  4. Sauté the artichoke wedges in a pan with olive oil, garlic, and chili. Add chopped mint at the end.
  5. Make the mayo: separate the egg yolk, add a pinch of salt, lemon juice and zest. Slowly pour in oil while whisking until emulsified.
  6. Toast the burger buns in a non-stick pan with a little oil.
  7. Cook the burger patty in a hot pan without oil, 3-4 minutes per side for medium-rare.
  8. Assemble: spread mayo on both halves of the bun. Add sautéed artichokes, then the burger, then fried artichoke chips, fresh mint leaves, and a sprinkle of lemon zest. Close the bun and serve.
