A Roman-style hamburger with crispy and tender fried artichokes, veal bacon, and a minty mayonnaise sauce.

Method

  1. Prepare the meat: add salt, pepper, and lemon zest. Knead well and form into patties.
  2. Prepare the artichokes: remove the outer leaves and the inner choke. Slice two very thinly for a crispy texture, and slice the remaining two a bit thicker.
  3. Fry the thinly sliced artichokes in hot oil until golden and crispy. Drain and set aside.
  4. In another pan, fry the thicker artichoke slices with a drizzle of oil, a clove of garlic, and a pinch of salt until crispy. Drain and set aside.
  5. Cook the veal bacon until crispy.
  6. Fry the hamburger patties on both sides until cooked to your liking.
  7. Mix mayonnaise with mustard and mint to make the sauce.
  8. Assemble the dish: spread the sauce on the base, add the fried artichokes (both types), then the crispy veal bacon, and finally the burger patty.
