Gulasch with Fake Mash

A hearty gulasch (Hungarian-style beef stew) with a twist, served with a quick 'fake' mash made from potatoes and egg yolk, without butter or milk. The gulasch is slow-cooked with lard, guanciale, spices, and a hint of red currant jam.

Method
- In a clay pot, heat a generous amount of olive oil. Add lard cut into pieces and guanciale; let them brown.
- Add pitted green olives, capers (rinsed and soaked in white wine), and anchovy fillets. Stir.
- Cut the beef (cappello del prete or similar cut) into chunks. Coat in flour.
- In a separate pan, fry the floured meat in oil until golden.
- Transfer the fried meat to the clay pot. Add paprika, a ladle of broth, and white wine. Stir.
- Cover and cook for about 2 hours or until meat is very tender.
- Meanwhile, prepare the fake mash: boil potatoes until soft. While still hot, mash with a fork.
- Season the mashed potatoes with salt and coarse black pepper. Add only the egg yolk and mix well.
- Prepare the red currant jam: reduce water, wine, and sugar with red currants until syrupy.
- To serve, place a generous spoonful of mash on the plate, top with goulash and some of its sauce, and garnish with the red currant jam.
