A cold version of the classic Roman pasta dish Gricia, with crispy guanciale, pecorino cheese, black pepper, and a touch of arugula for a fresh summer twist.

- Clean the guanciale and cut it into thin strips.
- Place the guanciale in a cold pan and turn on the heat, let it render slowly until crispy.
- While the guanciale cooks, chop the arugula.
- When the guanciale is ready, remove it from the pan and let the fat cool.
- Cook the pasta (candolì) al dente and drain.
- Cool the pasta in ice water to stop cooking, then drain.
- Add the guanciale fat to the pasta.
- Add grated pecorino romano and mix well.
- Add freshly ground black pepper.
- Add the chopped arugula and a drizzle of extra virgin olive oil.
- Add the crispy guanciale and mix.
- Serve with extra pepper and arugula leaves for garnish.
