The queen of Roman cuisine with a touch of white wine vinegar that perfectly balances the saltiness and fat of the guanciale.

Ingredients
6 items- 200 gRigatoni
- 150 gGuanciale
- 1 tbspWhite Wine Vinegar
- 65 gPecorino Romanofreshly grated
- Black Pepperwhole black peppercorns, cracked fresh
- Saltfor pasta water, to taste
Method
- Choose rigatoni pasta with a whitish color and floury appearance.
- Remove any bad parts, mold, or rancid spots from the guanciale.
- Slice the guanciale lengthwise into strips about 1 cm thick.
- Cook the guanciale in an iron skillet over medium heat to render the fat without burning.
- Once the guanciale is cooked, deglaze the pan with a generous tablespoon of white wine vinegar.
- Cook the rigatoni in salted boiling water until al dente.
- Drain the pasta and add it to the pan with the guanciale. Remove from heat.
- Add freshly cracked black pepper and a generous amount of freshly grated Pecorino Romano. Mix well.
- Serve with an extra grating of Pecorino Romano and a final sprinkle of black pepper.
