Potato Doughnuts

Delicious potato doughnuts, soft and fluffy, coated in cinnamon sugar. A traditional Italian treat.

- Sift the flours and place them in the mixing bowl.
- Add the mashed boiled potatoes.
- Add the sugar.
- Crumble the yeast and start mixing.
- Add the vanilla extract.
- Gradually add the eggs, mixing slowly.
- Add the grated orange zest and salt.
- Add the soft butter piece by piece, mixing until the dough is smooth.
- Lay the dough on the work surface and fold it to incorporate air.
- Form a ball, place in a lightly oiled bowl, cover with plastic wrap, and let rise in the oven with the light on for a few hours.
- After rising, gently roll out the dough to about 1 cm thickness.
- Use a pastry cutter to shape the doughnuts (classic twisted or ring shape). For rings, cut out the center with a smaller cutter.
- Place the shaped doughnuts on a floured cloth and let rise for at least 3 hours.
- Heat oil to 160°C (320°F) and fry the doughnuts until golden on both sides.
- Drain on paper towels and then coat in the sugar-cinnamon mixture.
