Green Gnocchi with Butter and Sage

Soft green gnocchi made with potatoes and fresh spinach, tossed in a simple butter and sage sauce and finished with Parmigiano Reggiano.

Ingredients
9 items- 1 kgRed PotatoesUse starchy red potatoes
- 250 gBoiled SpinachBoiled and well-drained spinach, chopped
- 400 gFlourAll-purpose or tipo 00 flour
- 2 pcsEggsWhole large eggs
- SaltTo taste
- NutmegA pinch
- ButterA knob, to taste
- Fresh SageFresh leaves, to taste
- Parmigiano ReggianoGrated, to taste
Method
- Boil the potatoes in salted water until tender. Peel and pass them through a potato ricer or food mill.
- Add a pinch of nutmeg, salt, and the flour. Mix lightly.
- Form a well in the center and add the eggs and the chopped, well-drained spinach.
- Mix everything together and knead into a firm, dry dough.
- Dust the work surface with flour, roll out the dough into ropes, and cut into gnocchi of your preferred shape.
- Drop the gnocchi into boiling salted water. Cook until they float, then drain.
- Meanwhile, in a non-stick pan, melt a knob of butter with fresh sage leaves. Add a ladle of pasta cooking water to emulsify.
- Transfer the drained gnocchi into the pan and toss gently.
- Remove from heat, sprinkle with grated Parmigiano Reggiano, and serve immediately.
