Gnocchi with Peppers, Cherry Tomatoes, and Sausage

A quick and delicious gnocchi dish made with leftover bell peppers, sweet friggitelli peppers, cherry tomatoes, and crumbled sausage. The sauce comes together in about 10 minutes, and the fresh cherry tomatoes add a burst of brightness at the end.

Ingredients
8 items- Sausagecrumbled
- Friggitellisweet Italian peppers, sliced into rings or strips
- Bell Peppersbell peppers, cut into strips
- Cherry Tomatoescherry tomatoes, quartered
- Potato Gnocchipotato gnocchi
- Basilfresh basil leaves, to taste
- Olive Oilextra virgin olive oil, for cooking
- Saltto taste
Method
- Heat a little oil in a pan. Crumble the sausage into the pan and brown it.
- Clean and slice the friggitelli peppers (or sweet peppers) into rings or strips. Add them to the pan along with the bell peppers cut into strips. Cook for about 10 minutes until the peppers soften and the sausage is cooked.
- Meanwhile, cut the cherry tomatoes into quarters and set aside.
- Bring a pot of salted water to a boil and drop in the potato gnocchi.
- When the gnocchi rise to the surface, add a few fresh basil leaves to the sauce, then add the cherry tomatoes and a pinch of salt.
- Transfer the cooked gnocchi directly into the sauce pan and toss everything together gently.
- Serve the gnocchi with some pepper pieces on top.
