Pumpkin Gnocchi

Easy and delicious pumpkin gnocchi, perfect for autumn. Serve with butter and Parmesan for a simple yet tasty dish.

- Cut the pumpkin into slices no thicker than 0.5 cm.
- Place the pumpkin pieces on a baking tray and bake at 200°C (400°F) for about 30 minutes.
- After cooking, blend the pumpkin into a smooth puree using a food processor or blender.
- Cook the potatoes until soft, then peel and mash them with a potato masher.
- Place the mashed potatoes on a work surface, let cool slightly. Add the pumpkin puree, grated Parmesan, nutmeg, salt, and egg yolk. Add the flour and knead until a compact dough forms. Add more flour if needed, but do not overdo it.
- Once the dough is well combined, shape the gnocchi: roll out the dough into ropes, cut into pieces about 0.5 cm long. Dust generously with semolina to prevent sticking.
- Cook the gnocchi in boiling salted water. When they float to the surface, they are ready. Drain and serve with your favorite sauce, such as melted butter and Parmesan.
