A perfect recipe for using up stale bread, combined with creamy ricotta for a delicious alternative to potato gnocchi.

Method
- Soak stale bread in milk for 5 minutes.
- Squeeze the excess milk out of the bread.
- In a bowl, mix the soaked bread with ricotta, an egg, flour, salt, and pepper.
- Add lemon zest to the mixture.
- Knead the dough until smooth.
- Roll the dough into sausages and cut into individual gnocchi, using a fork to create ridges.
- Boil in salted water until they float to the surface.
- Finish by tossing the gnocchi in a sauce made with olive oil and garlic, then garnish with fresh basil and plenty of parmesan.
