Gnocchi alla Romana

A classic Roman recipe made with semolina, milk, butter, and cheese, baked until golden and crispy on the surface. A traditional primo piatto that is simple, economical, and delicious.

Ingredients
8 items- 1 lWhole Milk
- 250 gSemolina
- 100 gButter30g for dough, 70g for topping
- 100 gGrated Parmigiano Reggiano
- 40 gGrated Pecorino Romano
- Nutmega pinch
- Salta pinch
- 2 pcsEgg Yolks
Method
- Boil the milk with a pinch of nutmeg and a pinch of salt.
- When it comes to a boil, lower the heat and add 30g of butter. Stir until melted.
- Gradually add the semolina while stirring vigorously with a whisk.
- Cook for 5 minutes, stirring constantly, until the mixture thickens and pulls away from the pan.
- Remove from heat and add the grated Parmesan. Mix well.
- Add the egg yolks and mix thoroughly until fully incorporated.
- Transfer the dough onto a sheet of parchment paper and shape it into a cylinder. Let it cool completely.
- Once cooled, cut the cylinder into slices about 1 cm thick.
- Butter a baking dish. Arrange the slices slightly overlapping in the dish.
- Pour the remaining 70g of melted butter over the gnocchi.
- Sprinkle generously with grated Pecorino Romano.
- Bake in a preheated static oven at 200°C for 20 minutes, until golden and gratinated on top.
