Gnocchi with Rib and Sausage Sauce

Homemade potato gnocchi served with a rich, slow-cooked sauce made from pork ribs, sausages, tomatoes, and aromatics. A classic Roman comfort dish.

Method

  1. Finely dice carrot, celery, and onion for a mirepoix (or blend them).
  2. Add a drizzle of olive oil to a pot, then add the vegetables and the meats (sausages and pork ribs). Season with salt and pepper.
  3. Brown the meat and vegetables, then deglaze with red wine.
  4. Add peeled tomatoes, chili pepper, and adjust salt and pepper.
  5. Bring to a boil, then lower the heat and simmer for about 3 hours.
  6. Meanwhile, boil potatoes (starting from cold water) for about 1 hour until tender.
  7. When potatoes are cooked and cool enough to handle, pass them through a ricer or food mill.
  8. Add flour, a pinch of salt, and egg to the mashed potatoes. Knead until a smooth dough forms.
  9. Divide the dough into portions, roll each into a long rope, and cut into gnocchi.
  10. Dust the gnocchi with flour to prevent sticking.
  11. Cook gnocchi in salted boiling water until they float to the surface (about 2–3 minutes).
  12. Drain gnocchi into a bowl with a drizzle of olive oil and toss gently.
  13. Serve gnocchi with the sauce, top with a piece of rib and sausage, and finish with grated pecorino cheese.
