Gnocchi al Sagrantino is a traditional Umbrian pasta dish made with potato gnocchi in a rich sauce of Sagrantino wine (dry and passito), guanciale, onion, cream, and Parmigiano Reggiano.

- Sagrantino Secco2/3 of the total wine
- Sagrantino Passito1/3 of the total wine
- Cream
- Parmigiano Reggiano 30 Monthsgrated
Method
- Mash the boiled potatoes. Add coarse salt, black pepper, flour, and one egg. Briefly knead until a smooth dough forms. Let rest.
- Finely chop the guanciale and red onion from Cannara together.
- In a large pan, place the chopped guanciale and onion and cook over low heat until creamy, without browning aggressively.
- Add a generous knob of butter and melt it.
- Pour in dry Sagrantino (two thirds) and passito Sagrantino (one third). Increase the heat to evaporate the alcohol. Wait until the smell of alcohol disappears.
- Add the cream and mix well.
- Bring a pot of salted water to a boil. Cook the gnocchi until they float to the surface.
- Drain the gnocchi and transfer them to the pan with the sauce.
- Add plenty of grated Parmigiano Reggiano aged 30 months and stir.
- Serve immediately.
