A springtime pasta dish featuring homemade water-and-flour gnocchetti, sautéed pioppini mushrooms, and Italian sausage, finished with pecorino cheese and a touch of spicy oil.

Ingredients

- SausageItalian sausage, casing removed
- Pioppini MushroomsFresh pioppini mushrooms
- White WineFor deglazing
- SaltTo taste
- PepperTo taste
- FlourFor the pasta dough
- WaterFor the pasta dough
- ParsleyFinely chopped
- PecorinoGrated, plus extra for serving
- Spicy Oil(optional) — Optional, for finishing
Method
- Heat garlic-infused oil in a pan. Add the sausage meat and break it up with a spoon.
- Add the pioppini mushrooms (cut large ones in half) and sauté lightly.
- Deglaze with white wine, then season with a pinch of salt and pepper.
- For the pasta: mix flour and water to form a dough, roll it into thin snakes, and cut into gnocchetti (or pici/spaghettoni). Let rest.
- Cook the pasta in salted boiling water until it floats to the surface.
- Add finely chopped parsley to the sauce.
- Drain the pasta and add it to the sauce. Turn off the heat.
- Add grated pecorino cheese and stir to create creaminess.
- Optionally, add a drizzle of spicy oil.
- Serve with extra grated pecorino on top.
