These pizza swirls are perfect for sharing. Two fillings: one with mozzarella, broccoli, and pancetta; the other with smoked provola and tomato. Rolled, sliced, and baked until golden.

Method

  1. Prepare the pizza dough: mix 500g of flour, 300ml of warm water, 10g of salt, 3g of dry yeast (or 10g fresh), and 2 tablespoons of olive oil. Knead until smooth and let rise until doubled.
  2. Divide the dough into two equal portions and stretch each into a disc on a floured surface.
  3. For the first filling: spread mozzarella, broccoli (or sautéed broccoli rabe), sausage, and pancetta over one disc.
  4. For the second filling: crush peeled tomatoes over the second disc, add smoked provola, a grating of pecorino cheese, and a drizzle of olive oil.
  5. Roll each disc tightly into a log, sealing the seam.
  6. Cut each log into slices about 5 cm thick.
  7. Grease a baking dish with olive oil and arrange the slices cut-side up, close together.
  8. Sprinkle with additional pecorino and drizzle with olive oil.
  9. Bake in a preheated oven at 180-190°C for 25-30 minutes, until golden and crispy on top.
  10. Serve warm, pulling apart the swirls.
