Ingredients

- FlourTo taste, enough to bind the batter
- Olive OilA drizzle for the batter
- Sparkling WaterTo make the batter fluffy

- Frying OilFor deep frying
- 200 gYogurtFor the sauce
- MintA bunch for the sauce
- 1/2 pcsLemonJuice for the sauce

Method
- Grate the zucchini, carrot, and onion.
- Salt the grated vegetables and let them sit to release liquid.
- Squeeze out the excess liquid from the vegetables.
- In a bowl, mix the squeezed vegetables with flour, a drizzle of oil, and sparkling water until you get a creamy batter.
- Heat oil to 180°C (350°F).
- Drop spoonfuls of the batter into the hot oil and fry for about 3 minutes until golden and crispy.
- Drain the fritters on paper towels.
- For the sauce: blend mint with ice cubes and a pinch of salt until you get a green juice.
- In a separate bowl, season yogurt with lemon juice, pepper, and salt.
- Stir the mint juice into the yogurt, a little at a time, to keep it creamy.
- Serve the fritters with the yogurt-mint sauce and garnish with mint leaves and lemon.
