Crispy vegetable fritters made with zucchini, carrots, and onion, served with a creamy yogurt and mint sauce. Perfect as an appetizer or aperitif.

Method

  1. Grate the zucchini, carrot, and onion.
  2. Salt the grated vegetables and let them sit to release liquid.
  3. Squeeze out the excess liquid from the vegetables.
  4. In a bowl, mix the squeezed vegetables with flour, a drizzle of oil, and sparkling water until you get a creamy batter.
  5. Heat oil to 180°C (350°F).
  6. Drop spoonfuls of the batter into the hot oil and fry for about 3 minutes until golden and crispy.
  7. Drain the fritters on paper towels.
  8. For the sauce: blend mint with ice cubes and a pinch of salt until you get a green juice.
  9. In a separate bowl, season yogurt with lemon juice, pepper, and salt.
  10. Stir the mint juice into the yogurt, a little at a time, to keep it creamy.
  11. Serve the fritters with the yogurt-mint sauce and garnish with mint leaves and lemon.
