Greek tomato fritters, or Domatokeftedes, are a traditional Greek dish perfect for summer. Tasty and light, they are made with ripe tomatoes, aromatic herbs, and a light batter.

Ingredients

- Salt
- Onion
- Cinnamon
- Sugar

- Fresh Oregano

Method
- Cut the tomatoes into small pieces using a serrated knife to avoid crushing them.
- Place the tomatoes in a colander, add salt, and let them rest for about 30 minutes to an hour to release liquid.
- Gently squeeze the tomatoes and transfer them to a bowl.
- Add chopped onion, a bit of cinnamon, a bit of sugar, baking powder, and flour.
- Add chopped basil and fresh oregano.
- Mix the dough with your hands.
- Let the dough rest for about 30 minutes.
- Heat plenty of oil in a pan.
- Using a spoon, take portions of the dough and form croquettes, flattening them slightly.
- Fry the fritters until golden and crispy on both sides.
- Drain and serve.
