Rice Frittata with Genovese Sauce

A delicious way to use leftover genovese sauce: a rice frittata stuffed with scamorza cheese and the rich Neapolitan meat and onion sauce, then pan-fried until golden and crispy.

Method
- Cook the rice in boiling salted water until tender, then drain.
- In a bowl, beat the eggs with grated Parmesan, salt, and pepper.
- Pour the egg mixture over the cooked rice and mix well.
- Heat a non-stick pan with a little oil.
- Place a portion of the rice mixture in the pan, spreading it out especially in the center, leaving slightly higher edges.
- Add pieces of scamorza cheese (smoked or not) on top of the rice.
- Add some genovese sauce (see steps below for preparation).
- Cover with the remaining rice mixture, pressing down gently.
- Cook over very low heat until the bottom is golden and set, then carefully flip the frittata (use a plate if needed).
- Cook the other side until golden and cheese is melted.
- Serve hot.
- For the genovese sauce: In a pot, heat oil and sauté a finely chopped mixture of celery and carrot.
- Add a bay leaf and finely chopped prosciutto.
- Add the meat cuts (coppa, beef shoulder, beef muscle, pork) cut into pieces and brown well.
- Deglaze with white wine, allowing it to evaporate.
- Add a pinch of juniper berries, lightly crushed.
- Slice a large quantity of onions and add them to the pot.
- Season with salt (go easy because of the prosciutto).
- Cover and cook on very low heat for at least 3 hours, stirring occasionally.
- Use this sauce as filling for the frittata.
