Potato Frittata

A classic Italian frittata made with fried potatoes, eggs, and cheese. Crispy on the outside, soft and fluffy inside.
Method
- Peel the potatoes and cut them into slices about 1 cm thick, then cut into cubes of similar size.
- Heat seed oil in a pan and fry the potato cubes until golden.
- Drain the fried potatoes on paper towels.
- In a bowl, beat the eggs with salt, pepper, and cheese.
- Add the fried potatoes to the egg mixture and stir to combine.
- In a clean pan, heat a layer of oil.
- Pour the mixture into the pan and spread it evenly.
- Cover and cook over very low heat until the egg coagulates (both on the surface and underneath).
- Flip the frittata using a lid.
- Cook the other side briefly.
- Serve immediately.
