Potato Frittata

A simple but delicious potato frittata from Rome, made without eggs. Boiled potatoes are mashed and mixed with a tomato-onion sauce, breadcrumbs, parmesan, and lemon zest, then cooked low and slow until set.

Method

  1. Boil the potatoes for 20 minutes, then drain.
  2. Peel and mash the potatoes.
  3. In a pan, sauté the onion (cut coarsely), then add chopped tomato and a little basil.
  4. Add the mashed potatoes to the sauce and cook for about 5 minutes.
  5. Add breadcrumbs, Parmesan, and lemon zest.
  6. Flatten the mixture well and cook on the lowest heat for 10 minutes.
  7. Let it cool completely in the pan before turning it out (otherwise it will fall apart).
  8. Serve with extra Parmesan and basil on top.
