Potato Frittata

A simple but delicious potato frittata from Rome, made without eggs. Boiled potatoes are mashed and mixed with a tomato-onion sauce, breadcrumbs, parmesan, and lemon zest, then cooked low and slow until set.
Method
- Boil the potatoes for 20 minutes, then drain.
- Peel and mash the potatoes.
- In a pan, sauté the onion (cut coarsely), then add chopped tomato and a little basil.
- Add the mashed potatoes to the sauce and cook for about 5 minutes.
- Add breadcrumbs, Parmesan, and lemon zest.
- Flatten the mixture well and cook on the lowest heat for 10 minutes.
- Let it cool completely in the pan before turning it out (otherwise it will fall apart).
- Serve with extra Parmesan and basil on top.
