Ingredients
5 items- Cipolle di Tropea IGPPreferably Tropea IGP red onions
- Eggs
- Black Pepper
- Fresh Basil
- Pecorino RomanoUse a generous amount
Method
- Remove the first layer of the Tropea onions and slice them into rings.
- In a bowl, beat the eggs with pepper, basil, and a generous amount of grated Pecorino Romano.
- Add the sliced onions to the egg mixture and mix.
- Pour the mixture into a pan, cover, and cook over medium heat for 5 minutes.
- Serve hot.
