A quick and delicious frittata made with fresh anchovies, flavored with lemon zest, garlic, and breadcrumbs for extra crunch. Perfect for a sandwich or as a main dish.

Ingredients

Method
- Season the breadcrumbs with pepper and a pinch of salt.
- Grate lemon zest over the breadcrumbs and grate a little garlic.
- Coat the fresh anchovies in the breadcrumb mixture, pressing well.
- Heat oil in a pan and fry the breaded anchovies until golden on both sides.
- In a bowl, beat eggs with salt and pepper. Add some breadcrumbs for crunchiness.
- Pour the egg mixture over the anchovies in the pan.
- Reduce heat to minimum, cover, and cook for 5 minutes.
- Flip the frittata (countdown: 3, 2, 1) and cook for 1 minute on the other side.
- Finish with a final touch (optional: lemon zest or parsley).
- Cut the frittata like a pizza and serve. It's great in a sandwich.
