Frittata alla Puveriello (Poor Man's Frittata)

A classic Neapolitan frittata made with stale bread, eggs, Pecorino Romano, and garlic. Simple, crunchy, and incredibly flavorful.

Method

  1. Heat a splash of extra virgin olive oil in a pan and toast the stale bread until golden.
  2. Add garlic and chili pepper, continue toasting until the bread is crunchy and the garlic is slightly burnt.
  3. Season with salt, parsley, and grated Pecorino Romano. Mix well.
  4. In a bowl, beat the eggs and stir in the bread mixture until well combined.
  5. In the same pan, add some seed oil and pour in the egg-bread mixture. Spread evenly and cook over low heat.
  6. Once the bottom is set, flip the frittata and cook the other side gently.
  7. Finish with a generous grating of Pecorino Romano and a sprinkle of dried chili. Serve.
