Crispy, golden fried pastry strips dusted with powdered sugar, known as frappe or chiacchiere, a classic Italian Carnival treat.

Ingredients
10 items- 250 gFlour
- Aroma di Vaniglia in Polvere(optional) — Or lemon/orange zest
- 2 pcsEggsWhole
- 30 gCane SugarBrown sugar
- 6 gBaking PowderBaking powder
- Grappa Bianca1/2 small cup (approx. 60 ml)
- SaltPinch
- 25 gButterSoftened
- High Oleic Sunflower OilFor frying; high-oleic sunflower oil
- Powdered SugarFor dusting
Method
- Mix the flour with vanilla powder (or lemon/orange zest).
- Add two whole eggs and start mixing.
- Add 30 grams of brown sugar.
- Add 6 grams of baking powder.
- Add a splash of white grappa.
- Add a pinch of salt.
- Add softened butter and knead until the dough is smooth and homogeneous.
- Wrap the dough in plastic film and let it rest at room temperature for 1 hour.
- Roll out the dough very thinly using a pasta machine or a rolling pin.
- Cut the dough into strips of desired shape. Make small cuts in the center of each strip.
- Heat sunflower oil to 160–170°C. Fry the strips until golden and they rise to the surface.
- Drain on paper towels and dust generously with powdered sugar.
