A quick and decadent four-cheese fondue, perfect as a late-night snack. Made with a mix of pecorino, taleggio, and caciotta, this creamy fondue comes together in just 5 minutes.

Ingredients
7 items- MilkA splash of high-quality milk
- ButterA knob of butter
- Pecorino di FossaRemove rind and crumble; use sparingly as it is very pungent
- Pecorino di PienzaRemove rind and cut into very small pieces
- TaleggioRemove rind if desired and cut into small pieces
- Caciotta di ColpioritoRemove rind and chop finely
- NutmegGrate a little over the fondue for fragrance
Method
- Heat a splash of high-quality milk and a knob of butter in a small saucepan.
- When the milk begins to boil, lower the heat.
- Add the pecorino di fossa, after removing the rind and crumbling it. Do not add too much as it is very pungent.
- Add the pecorino di pienza, after removing the rind and cutting it into very small pieces.
- Add the taleggio, after removing the rind (if desired) and cutting it into small pieces.
- Add the caciotta di colpiorito, after removing the rind and chopping it finely.
- Stir constantly with a whisk until all the cheeses are completely melted and the mixture is smooth and stringy.
- Grate a little nutmeg over the fondue for fragrance.
- Let the fondue rest for a moment off the heat.
- Serve on a cold plate or surface. Enjoy immediately as a late-night snack.
