Finto Pesce (Fake Fish) is a clever Italian dish that mothers used to make children eat fish. It consists of a tuna and potato salad flavored with pickles, capers, and fresh parsley, shaped into a fish form and decorated with mayonnaise and pickled vegetables.

Method

  1. Prepare the potatoes: boil them until tender, then let them cool completely (preferably a day in advance). Peel and mash or dice.
  2. In a large bowl, combine the pre-cooked potatoes, chopped pickled gherkins, rinsed capers, well-drained tuna, homemade mayonnaise, and chopped fresh parsley. Mix well.
  3. Taste and season with salt if needed.
  4. Line a fish-shaped mold or a small bowl with plastic wrap. Press the mixture firmly into the mold, smoothing the top.
  5. Cover with plastic wrap and refrigerate for at least 2 hours.
  6. Once set, unmold onto a serving plate. Smooth any rough edges with a spatula.
  7. Decorate with mayonnaise to resemble fish scales and add pickled vegetables (giardiniera) for color.
