A poor man's version of traditional braciole, made with a thin omelette rolled with parsley and pecorino, simmered in a rich tomato sauce.

Method

  1. Crush one clove of garlic and sauté in a drizzle of extra virgin olive oil.
  2. Add the tomato passata, season with salt, cover, and let it simmer on low heat.
  3. In a bowl, beat the eggs with salt, pepper, and grated Pecorino Romano cheese.
  4. Cook a thin omelette (frittatina) in a non-stick pan until golden on both sides.
  5. Once the omelette is done, sprinkle it with chopped parsley and more Pecorino Romano. Optionally add chopped garlic and chili.
  6. Roll the omelette tightly into a log shape. If needed, secure with toothpicks.
  7. Add the rolled omelette to the simmering tomato sauce and let it absorb the flavors for a few minutes.
  8. Serve the fake meat rolls hot with plenty of sauce.
