Baked fennel: a very tasty and simple side dish! Fennel is often eaten raw, but cooked it's delicious. This gratin version is irresistible, with parmesan and butter creating a golden crust. Perfect for a vegetarian meal.

Method

  1. Trim the fennel: remove the stalks and cut each bulb into quarters (or thirds if very large). Do not remove the root base so the layers stay together.
  2. Bring a pot of salted water to a boil. Boil the fennel for about 10 minutes, or steam for 5 minutes. Do not overcook – they should be tender but still hold their shape.
  3. Drain the fennel well.
  4. Arrange the fennel pieces in a baking dish, preferably in a radial pattern. Season with a little salt and pepper.
  5. Dot with pieces of butter, distributing evenly.
  6. Generously sprinkle with grated Parmesan cheese (a thick layer). You can use other cheese, but avoid pecorino as it is too strong.
  7. Bake in a static oven at 200°C for 20–25 minutes, until a golden crust forms on top. Serve hot.
