The Neapolitan Filoscio is a simple, poor and quick recipe with incredible taste! Just 5 eggs, a 22 cm pan and very few ingredients to get a tall, soft and flavorful result, as traditionally done in Naples.

- Pepper
- Grated Cheese
- Olive Oil
- Fior di Latte
- Cooked Ham(optional) — Optional addition, not traditional
Method
- Beat the eggs with salt, pepper and grated cheese.
- Heat a non-stick pan with a drizzle of oil over very low heat.
- Pour the egg mixture into the pan and cook over very low heat, stirring the edges with a spatula until the eggs begin to set.
- Add abundant fior di latte (fresh mozzarella), more grated cheese, and optionally prosciutto cotto.
- Continue cooking until the cheese melts.
- Loosen the edges of the frittata, then fold it over itself, lifting and closing it like an omelette.
- Serve immediately.
