In this video, Ruben makes Roman-style fried cod fillets in batter with a side of zucchini in batter, accompanied by a homemade truffle mayonnaise.

Ingredients

- Cod Fillet
- ZucchiniSliced into rounds
- Seed OilFor deep frying
- MayonnaiseHomemade mayonnaise
- TruffleGrated into the mayonnaise
- LimeJuice added to the mayonnaise

Method
- Prepare the batter: mix equal parts all-purpose flour and rice flour. Optionally add a splash of sparkling water. Mix until smooth and let rest.
- Prepare the cod: remove the skin by sliding a knife between the skin and flesh. (Optional: dry the skin in the microwave then fry for a crispy skin.) Cut the fillet into pieces.
- Prepare the truffle mayonnaise: grate truffle into homemade mayonnaise and add lime juice. Mix well.
- Fry: heat seed oil in a pan. Dip cod fillets in batter and fry until golden. Similarly, dip zucchini slices in batter and fry.
- Serve: arrange fried cod and zucchini on a plate. Add a spoonful of truffle mayonnaise. Season with salt to taste.
