Fisherman's fettuccine is a very tasty and fragrant first course, perfect to bring to the table when you want to surprise your guests. Simple yet delicious, with zucchini, shrimp, and a fresh herb and pine nut mixture.

Ingredients
11 items- Olive Oil
- 1 pcsGarlic1 small clove
- Zucchini
- Fettuccine
- Fresh Mint
- Fresh Thyme
- Pine Nuts

- White Wine
- Salt
- Black Pepper(optional)
Method
- Heat a drizzle of oil in a pan and add a clove of garlic.
- Slice the zucchini thinly and add to the pan. Cook over high heat for about 2 minutes.
- Meanwhile, bring a pot of salted water to a boil and cook the fettuccine until al dente.
- Prepare a rough chop of fresh mint, thyme leaves, and pine nuts.
- Remove the garlic from the pan.
- Increase the heat, add the cleaned shrimp tails, and season with salt.
- Deglaze with white wine and let it evaporate completely.
- Add the cooked fettuccine to the pan along with a splash of pasta water if needed. Toss to combine and finish cooking.
- Add some of the herb-pine nut mixture and mix well.
- Serve the fettuccine with additional herb mixture on top, and finish with a drizzle of olive oil and freshly ground black pepper if desired.
