A flavourful pasta dish combining tender cuttlefish, sweet peas, crispy guanciale and a touch of squid ink for an elegant summer meal.

- Cuttlefishwhole cuttlefish, cleaned
- Cuttlefish Ink
- Fresh Garlicfresh
- Fettuccine
- Olive Oilextra virgin
- Salt
- Black Pepperfreshly ground
Method
- Cut the guanciale into small pieces and place in a non-stick pan with a drizzle of oil.
- Add finely chopped spring onion.
- When the guanciale is wilted, add fresh peas.
- Add a little water and cook the peas.
- Meanwhile, clean the cuttlefish: separate the head, tentacles and innards.
- Slice the head into thin strips and cut the tentacles into pieces.
- When the peas are cooked, blend them with a little oil until smooth.
- In the pan, add a drizzle of oil, crushed fresh garlic, and cuttlefish tentacles. Cook for a few minutes.
- Add the cuttlefish strips and squid ink, mix.
- Cook the fettuccine in boiling salted water.
- Drain the pasta and transfer it to the pan with the cuttlefish.
- Add the pea cream and toss with pasta water.
- Serve with a drizzle of oil and black pepper.
