Crispy fried breaded meat bundles stuffed with mortadella and semi-aged pecorino cheese, served with a simple tomato sauce. A perfect summer appetizer twist on the classic Roman involtini.

Ingredients

- Semi-Aged Pecorino
- Flour
- Pangrattato Panko
- Salt(optional) — to taste
- 1 pcsGarlic
- Olive Oil
- Tomatoesfresh or peeled tomatoes

Method
- Slice the beef very thinly (top round or sirloin).
- Place a slice of mortadella on each beef slice.
- Add a piece of semi-aged pecorino cheese on top of the mortadella.
- Roll up the beef to form a bundle and secure with a toothpick.
- Season the bundles with a little salt.
- Coat each bundle first with flour, then with panko breadcrumbs, pressing gently to adhere.
- Heat frying oil to 360°F (180°C) in a deep pan.
- Fry the bundles in batches until golden and crispy, about 2-3 minutes.
- Remove and drain on paper towels.
- For the tomato sauce: In a pan, heat olive oil with a sliced garlic clove.
- Add the tomatoes (peeled and crushed) and oregano. Cook for a few minutes.
- Serve the fried bundles with the tomato sauce and garnish with fresh savory flowers if desired.
