Ingredients
7 items- 500 gFagioli Corallo

- White Onionto taste, finely chopped

- Extra Virgin Olive Oilabundant

Method
- Clean the coral beans by removing the stem end where they attach to the plant.
- Bring a pot of salted water to a boil and add the beans. Cook until tender but still slightly crunchy, testing after a couple of minutes.
- Drain the beans and set aside.
- In a pan, heat abundant extra virgin olive oil. Add finely chopped white onion and two cloves of garlic, and sauté until soft.
- Cut the tomatoes into pieces, removing the core. Add them to the pan and cook until they begin to break down.
- Add the drained beans to the pan. Season with salt. Stir well, cover, and cook on low heat for about 10 minutes, letting the flavors meld.
- Remove the lid, add fresh basil leaves, give a final stir, and turn off the heat.
- Serve the beans warm, optionally with grilled meat or bread.
