A classic Italian bean dish made famous by the movie 'They Call Me Trinity'. Cooked in an iron pan with sausage, prosciutto, soffritto, tomato, chili, and herbs. Served with rustic bread.

Ingredients
14 items- Extra Virgin Olive Oilfor the base
- 2 pcsProsciuttothinly sliced
- Sausagecrumbled into pieces
- Celeryfinely chopped for soffritto
- Carrotfinely chopped for soffritto
- Onionfinely chopped for soffritto
- Vino Bianco del Lazioa splash for deglazing
- Tomatocrushed tomatoes
- Fagioli Borlotti Lessaticanned or home-cooked, drained
- Chili Pepperto taste
- Black Pepperto taste
- Saltmoderate, as prosciutto and sausage are salty
- 2 pcsBay Leavesfresh or dried
- Rosemaryfresh sprig
Method
- Heat extra virgin olive oil in an iron pan and add two slices of prosciutto.
- Add the sausage and cook until crumbled.
- Add minced celery, carrot, and onion (soffritto) and sauté.
- Deglaze with a splash of white wine from Lazio.
- Add tomato and the pre-cooked borlotti beans.
- Season with chili pepper, black pepper, and moderate salt (remember the prosciutto and sausage are already salty).
- Add two bay leaves and a sprig of rosemary.
- Cook until the beans are tender and the sauce has thickened.
- Serve with a slice of rustic bread.
