A simple sauté of wild greens with anchovies, garlic, and chili, as made by Giorgione. The combination of bitter and aromatic greens is balanced by the saltiness of anchovies and heat from chili.

Ingredients
5 items- Erbette di CampoMixed wild greens (wild spinach, dandelion, caccia lepre, purslane, rocket)
- AnchoviesAnchovies, preferably salt-packed
- Garlic1 clove
- Chili PepperFresh red chili, with seeds for heat
- Olive OilExtra virgin olive oil, as needed
Method
- Wash the wild greens thoroughly and gently squeeze to remove excess water.
- In a large pan, heat a generous amount of olive oil. Add anchovy fillets, a garlic clove (whole or sliced), and a fresh red chili with seeds. Let them flavor the oil for a minute.
- Add all the greens to the pan and cook over medium heat for 10–15 minutes, stirring occasionally, until the greens are tender and their water has evaporated.
- Serve warm as a side dish, drizzling with a little extra virgin olive oil.
