Cutumè are traditional Sicilian doughnuts made with ricotta, semolina, and cinnamon, fried and coated in honey with orange zest.

- Drain the ricotta well.
- In a bowl, combine ricotta, sugar, semolina, eggs, and cinnamon. Mix until a homogeneous dough forms.
- Let the dough rest for at least half an hour.
- Form balls of about 10 g each, then lightly flatten and poke a hole in the center to form small doughnuts.
- Fry the doughnuts in hot oil until golden.
- In a small saucepan, heat honey with orange juice until boiling.
- Dip the fried doughnuts in the hot honey and add orange zest.
- Allow to cool (turning them often) and serve.
