Crostini with Onions and Anchovies

A simple and delicious antipasto featuring caramelized Tropea spring onions on toasted bread, topped with anchovy fillets. A perfect balance of sweet, savory, and briny flavors.

- Remove the green part of the Tropea spring onions and peel off the outer layer.
- Blanch the spring onions in boiling water for about 5 minutes, then cool in ice water to handle easily.
- Slice the spring onions into rings or halves.
- Heat a generous amount of oil in a pan and add the sliced spring onions.
- Cook over medium heat for 10–15 minutes until soft and beginning to caramelize.
- Add a little sugar and vinegar, then increase the heat and cook for 2 more minutes until sticky and caramelized.
- Toast slices of bread (bruschetta style).
- Place the caramelized onions on the toasted bread.
- Top with one or two anchovy fillets per crostino.
- Serve warm, at room temperature, or cold.
