A classic Lazio-style tart with a crumbly mixed-flour pastry, filled with creamy sheep ricotta and blackberry jam.

Ingredients
13 items- 300 gFlourall-purpose flour
- 150 gGrain Flourcereal flour
- 50 gFarina di Riso Venereblack rice flour
- 250 gButtercold butter
- 200 gPowdered Sugarpowdered sugar
- Saltpinch
- 2 pcsEggslarge eggs
- Vaniglia in bacca o essenzaa tip of vanilla bean or essence
- Lemon Zestzest of 1 lemon
- 700 gSheep's Ricottasheep ricotta
- 100 gSugarsugar for ricotta filling
- 500 gConfettura di moreblackberry jam
- Tuorlo d'uovo (per spennellare)(optional) — for brushing the lattice
Method
- In a food processor, combine the flours (00, cereal, black rice) and cold butter cut into cubes. Pulse until sandy.
- Add a pinch of salt, powdered sugar, vanilla, lemon zest, and eggs. Mix until dough comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 30-40 minutes (or 6-7 hours).
- Meanwhile, mix the ricotta with 100 g sugar until smooth.
- After chilling, roll out the dough on a floured surface and line a buttered and floured tart pan.
- Spread the ricotta mixture evenly over the base.
- Spread the blackberry jam over the ricotta.
- Roll out the remaining dough and cut into strips. Arrange them in a lattice on top.
- Brush the strips with egg yolk.
- Bake in a preheated static oven at 170-180°C for 35-40 minutes.
- Let cool, then remove from pan and serve.
