  • 500 gFlourType 1 flour (whole wheat or unbleached all-purpose can be substituted)
  • 250 gZucchero di canna integraleWhole cane sugar (or brown sugar)
  • 250 gButterCold unsalted butter, cut into small pieces
  • 5 pcsEgg YolksEgg yolks (the chef uses 7 in the video; adjust accordingly)
  • Orange ZestZest of one organic orange, to taste
  • 500 gRicottaFresh ricotta, drained if necessary
  • 100 gSugarFor the ricotta filling (adjust to taste)
  • RumA splash of dark rum (or substitute with vanilla extract)
  • Sour CherriesSour cherries in syrup, drained (or jarred amarene di Cantiano)
  • Dark Chocolate(optional)Dark chocolate, roughly chopped (optional, for extra richness)

Method

  1. Prepare the pasta frolla: In a large bowl, combine 500g tipo 1 flour, 250g whole cane sugar, orange zest to taste, and 250g cold butter cut into pieces. Mix with your fingertips until the mixture resembles coarse crumbs.
  2. Add 5 egg yolks (or 7, as the chef does in the video) and knead quickly until a dough forms. If too dry, add a splash of water or milk. Do not overwork the dough. Wrap in plastic and let rest for 30 minutes.
  3. For the ricotta filling: In a separate bowl, mix 500g ricotta with 100g sugar and a splash of rum. If desired, add chopped dark chocolate. Stir until smooth.
  4. Preheat the oven to 180°C (350°F).
  5. Roll out the pasta frolla on a lightly floured surface into a disc large enough to line a 24-26 cm tart pan. Transfer the dough to the pan, pressing gently into the bottom and sides. Trim any excess dough.
  6. Spread the sour cherries (amarene) evenly over the bottom of the crust.
  7. Pour the ricotta mixture over the cherries and spread it evenly.
  8. Bake in the preheated oven for 40 minutes, until the crust is golden and the filling is set.
  9. Allow the crostata to cool completely before slicing. Serve at room temperature.
