Max's twist on the classic Croque Madame: a buttery toasted sandwich with Penna Bianca cheese, San Giovanni ham, and a fried egg, served with a fresh tomato and lettuce salad.

Method

  1. Grate the Penna Bianca cheese coarsely and set aside.
  2. Melt a generous amount of butter in a small pan over low heat.
  3. Brush both sides of two bread slices with the melted butter.
  4. On one slice, place a layer of grated cheese, then slices of San Giovanni ham, then another layer of cheese. Top with the second slice of bread.
  5. In a heavy skillet over low heat, place the assembled sandwich. Cook slowly until the bread is golden and the cheese inside has melted, about 4–5 minutes per side. Cover the pan with a lid to help the cheese melt evenly.
  6. While the sandwich cooks, prepare the fried egg: in a non-stick pan, melt a little butter. Crack an egg and fry until the white is set but the yolk is still runny. Season with salt.
  7. Prepare the side salad: tear lettuce leaves into a bowl. Slice the tomato and add. Season with salt, pepper, and a drizzle of olive oil. Toss gently.
  8. Once the sandwich is golden and the cheese is melted, transfer to a plate. Top with the fried egg.
  9. Serve immediately with the salad on the side.
