Chef Max Mariola's version of the classic French Croque Madame, made with melted butter, grated semi-aged cheese, high-quality cooked prosciutto, and topped with a fried egg. Served with a simple salad.

Method
- Brush the bread slices with melted butter.
- Grate the cheese into shavings.
- Place the cheese on one slice of bread.
- Add the cooked prosciutto (no further cooking needed, just heat it).
- Close with the other slice of bread.
- Heat a cast iron skillet over low heat.
- Place the sandwich in the skillet, cover with a lid and cook until the cheese melts.
- Meanwhile, grease a pan with butter and crack two eggs.
- Fry the eggs sunny side up, seasoning only the egg whites.
- Prepare a salad: in a bowl, combine lettuce, sliced tomatoes, salt, pepper, and olive oil.
- Serve the croque madame with the fried egg and the salad on the side.
