Smoked provola and pancetta croquettes with a crispy coating, fried to perfection.

Ingredients
11 items- Patata Rossaboiled with skin
- Grana Padanograted
- Pancettacut into small cubes
- 1 pcsEgg
- Smoked Provolacut into sticks
- Flourfor batter
- Waterfor batter
- Breadcrumbspanko or homemade breadcrumbs
- Saltto taste
- Black Pepperto taste
- Lemonzest only
Method
- Boil the potatoes with the skin on from cold water until tender.
- Peel and mash the potatoes.
- Mix the mashed potatoes with grated Grana Padano, salt, pepper, lemon zest, and small cubes of pancetta.
- Add one egg and mix well.
- Cut the smoked provola into sticks.
- Take a portion of the potato mixture, insert a provola stick, and shape into a croquette.
- Prepare a thin batter with flour and water (consistency slightly thicker than milk).
- Dip each croquette into the batter, then coat in breadcrumbs (panko or homemade).
- Heat oil to 160°C (320°F).
- Fry a few croquettes at a time until golden brown and crispy.
- Drain on a wire rack (not paper towels) to keep crispy.
- Serve hot.
