Crispy potato croquettes filled with mortadella and provola cheese, fried to perfection.

Ingredients
6 items- Potatoes
- Mortadella
- 3 pcsProvolacut into pieces
- Eggbeaten
- Grated Bread
- Oilfor frying
Method
- Boil the potatoes and mash or grind them.
- Chop the mortadella with a knife.
- Cut the provola into three pieces.
- Take a portion of potatoes and form a concave shape in your palm.
- Place some mortadella and three pieces of provola in the center.
- Close the croquette and elongate it as much as possible.
- Dip the croquette in beaten egg.
- Coat it in breadcrumbs.
- Refrigerate for at least two hours.
- Heat oil to 170°C: to check the temperature, dip a wooden stick; when bubbles rise, it's ready.
- Fry the croquettes until golden.
- Drain on kitchen paper and serve immediately.
