A simple and delicious mascarpone cream made with pasteurized eggs, sugar, and mascarpone, flavored with vanilla or liquor. Perfect for spreading on pandoro or panettone.

Ingredients
5 items- 200 gPasteurized EggUse already pasteurized eggs, at room temperature
- 80 gSugar
- 500 gMascarpone
- Vanilla(optional) — Vanilla extract or bean, to taste
- Liqueur (Strega Or Marsala)(optional) — Splash of Strega or Marsala wine, to taste
Method
- In a bowl, combine sugar and pasteurized eggs at room temperature. Whip until the mixture becomes fluffy and holds its shape (writes).
- When the mixture is ready and holds peaks, add the mascarpone.
- Continue whipping at medium speed until fully incorporated.
- Optionally, add vanilla extract or a splash of Strega or Marsala liquor, and mix gently.
- The mascarpone cream is ready. Serve immediately or refrigerate.
- Optional serving: Cut a thick slice of pandoro, toast it in a pan with a knob of butter, and spread the cream on top.
